Citrus Souffle

INGREDIENTS:

FOR THE SOUFFLE:

· 30 g Butter

· 1/4 cup caster sugar

· 1 lemon rind, finely grated

· 2 tablespoons plain flour

· 1 cup milk, scalded hot

· 2 eggs separated

· 1 tablespoon citrus juice (lemon or lime)

· 2 egg whites, extra

· Icing sugar for dusting

WHITE CHOCOLATE SAUCE:

· 1/2 cup thickened cream

· 100 g white chocolate, finely chopped

· 1/2 lemon, finely grated zest

RECIPE:


Step 1:

Preheat oven to 200°C. Lightly grease 4 x 3/4-cup souffle dishes

Step 2:


In a medium saucepan, combine butter, sugar and zest. Stir over medium heat until melted. Add flour, cook stirring for 1 minute.

Step 3:

Whisk hot milk into butter mixture. Return to heat and cook, stirring, until mixture boils and thickens. Simmer for 1 minute. Beat in yolks and juice. Allow to cool slightly.

Step 4:

In a clean bowl, beat egg whites until soft peaks form. Fold lightly into citrus mixture.


Step 5:

Spoon evenly into prepared dishes. Bake for 15-20 minutes until puffed and golden.

Step 6:

Meanwhile, to make the white chocolate sauce, heat cream in a small saucepan on high. Remove and add chocolate and zest, stirring until melted.

Step 7:


Serve soufflés dusted with icing sugar. Accompany with white chocolate sauce, for drizzling.
